Chef de Cuisine/Kitchen Manager for new concept in Savage, MN

The team at Lake & Irving Restaurant & Bar (in Uptown Minneapolis) is in the process of remodeling the old Perkins Restaurant in Savage, MN for a brand new concept slated to open this May. Currently we are operating a ghost kitchen out of that location serving Lake & Irving food for takeout only. Obviously we are still a little ways out from opening, but we'd like to bring on a chef for that location so we can train on our procedures, standards, etc before opening.

The new concept (called Pau Hana) will feature a scratch kitchen and wood-fired pizza, with significant influence from Hawaiian Regional Cuisine. Prior experience in high-volume, artisanal pizza is a must as you will be largely responsible for training the opening kitchen staff.

Responsibilities will be typical of running a scratch kitchen at a large, full-service concept (with the patio, the dining room will seat 150). You will be the point person for BOH hiring and training, scheduling, inventory management, ordering, menu development, line management, quality control, food cost management, etc.
